How It Works

1. Detection: Kitchen suppression systems are equipped with heat-sensitive fusible links or electronic heat detectors strategically mounted in the hood system and ductwork. When the ambient temperature reaches a predetermined threshold—typically between 286°F and 360°F—these links melt or sensors trigger, automatically activating the system. Additionally, staff can initiate the system manually via pull stations, which are usually located near exits or in clearly marked, accessible areas. This dual-detection method ensures fast response whether the fire is detected automatically or spotted by a team member.

2. Suppression: Once activated, the system releases a specially formulated wet chemical agent through nozzles mounted in the hood, duct, and above cooking appliances. This agent rapidly cools the flames and forms a soapy foam-like blanket over hot surfaces and burning grease, cutting off the fire’s oxygen supply and preventing re-ignition. The chemical is specifically designed to suppress Class K fires, which are common in commercial kitchens due to cooking oils and fats. The system is engineered to target high-risk zones like fryers, grills, and stovetops, minimizing damage and ensuring the fire is contained before it spreads.

3. Shutdown: In tandem with chemical discharge, the system is wired to automaticallyshut off the gas and/or electricity supplying the cooking appliances. This is a crucial step in preventing the fire from reigniting after the flames are initially suppressed. The shutdown is typically controlled through mechanical or electrical interlocks that disconnect power to deep fryers, ranges, ovens, and other high-heat equipment the moment the system activates. This automatic shutoff protects both your equipment and your staff, ensuring the fire is fully extinguished and cannot resume due to residual heat or fuel flow.

4. Aftermath: The system will require cleanup and recharging before returning to service. After a discharge, the system leaves behind a wet chemical residue that must be thoroughly cleaned before cooking can resume. This residue, while non-toxic, is greasy and corrosive if left untreated, so all affected surfaces—appliances, countertops, hoods, and nearby walls—must be scrubbed with warm water and degreaser. Once cleanup is complete, a licensed technician must recharge the system, replace the chemical agent, and perform a full inspection and reset.
